Hashbrown history

Tonight I made history with our little family. I created something new for dinner that every boy ate for once. Every night is such a battle to get them to eat dinner. they love breakfast and lunch but dinner is a different story. We're tough and never make something just for them that they will eat. They know if they don't eat what I serve, they don't have dinner. Anyway I get really sick of the same meals so I try to cook at least one new recipe a week (always allergy friendly of course) and usually it comes with complaints from at least one child. Anyway, tonight I made a breakfast burrito casserole with random things we had since we just got back from the beach. I have made lots of mexican casseroles and lasagnas but this was a hit so I figured I should blog about it rather than throw the recipe in my giant box I will one day organize. I just browned some sausage and hashbrowns (We prefer Applegate chicken and maple sausage and trader Joe's hashbrown patties) Then I layered tortillas, refried beans (again trader joes), the potatoes and sausage, some diced tomatoes and daiya "cheese". It was very simple. I would have added peppers and onions but we are out right now and that would have been met with lots more eyerolling and whining.
